Not covers songs... but bands do acoustic versions for radio station appearances or unplugged sessions or maybe they were just doing some storytelling with a few hundred friends.
This was big in the 90's

for example:
My favorite of all time - Song called Plush

Although it's not entirely "acoustic" in the strict sense, Ryan Adams version of Wonderwall is freaking awesome. Personally I think it is better than the original. I find it much more soulful and pretty.

It's a really good cover, actually it's amazing... but it's hard for me to say it's better than the original because the original was so good. Because it is a cover.

He has so much great acoustic stuff that it's hard to pick one as the best, but that'd definitely be one of them.

I've seen him several times both solo and with CSNY and his acoustic stuff is always riveting live. Saw a show many years ago up at Universal which was just him playing two sets. The second was all the harder electric stuff which of course was awesome. But the first set just acoustic stuff. Just him and his guitar and that was my favorite part of the show. Which is saying a lot given how hard Neal rocks live.

Another favorite of mine when it comes to acoustic is Warren Haynes.
