Matter of taste really. I like the tenderness and complexity of Wagyu but I prefer the beef flavor of US Prime. American Wagyu splits that perfectly for me. Just like I prefer a really quality fillet to a ribeye. Not saying it’s better and not begrudging anyone else their favorite. Just does it for me. Same with wine. Love and respect a great barolo but I’ll drink an amarone or ripasso first if given the choice. And Italian above all else. _________________ “We must always take sides.
